Most mistakes in the kitchen don't end up so well... thankfully this time, my mess up was able to be turned into something great and completely unplanned... Cinnamon Caramel Chip Cookies!
It all started when I pulled out the recipe for mint chocolate cookies. I had already combined the first few ingredients when I realized I didn't have enough cocoa powder left for my cookies! I dug through my cupboard and found a bag of caramel flavored baking chips and had a great idea. With a little bit of experimenting (see the first batch below. lol.) I was able to turn my started cookie dough into these wonderful cookies! They taste a bit like snickerdoodles but have a distinctly different taste thanks to the caramel flavored baking chips inside.
I was able to bring these cookies to a church activity and everyone loved them! Not only are they soft in the center (when not over cooked, Haha!), but the cinnamon gives them an "Autumn" feeling without having to go full out pumpkin like everything else seems to be at this time of year. Not complaining... just sayin'...
To make these cookies, Combine 2/3 cup softened butter with 1 cup sugar. Next, add 1 egg and 1 Tablespoon of vanilla extract and combine. Mix in 1/2 teaspoon ground cinnamon, 1/2 teaspoon of baking soda, 1/4 teaspoon of salt, and 1 1/2 cup flour. Once the ingredients are fully combined, use a spoon to stir in about 3/4 cup of caramel flavored baking chips.
Roll the dough into balls and bake on a greased baking sheet at 350 degrees Fahrenheit for 8-10 minutes or until the edges of the cookies are just barely starting to brown.
And that's it!
Oh! and I also promised I'd show my first attempt...
That's how they came out of the oven before I decided they obviously needed more flour... Haha!
Thankfully, my brain power was at least strong enough that I only baked three practice cookies for the first batch!
I'd like to say that I hope I won't have any more baking mishaps, but after the way these cookies turned out... come at me bro'!
