Cake Mix Sugar Cookies

Christmas is almost here! And one thing that means in our house is that it's time to ice some sugar cookies!

For as long as I can remember, my family has iced sugar cookies at Christmas time. It's been a long standing tradition (as I'm sure it is for many families) to decorate them and drop a plate of them off at neighbors' houses. This year, with 2 small children and and a busy husband, most of the cookie baking fell to me.

I got lucky with the first batch and found a package of cookie dough in our freezer that my sister left at our house a little while ago... sorry Julia... I'll pay you back...

Each time we make these cookies, I'm amazed at how quickly they seem to go and how few I feel like we actually have after we start to plate them up. We didn't make nearly enough plates so guess what we're doing again this week... Yep. more sugar cookies.

So, the second time around, I was feeling lazy again and was thinking I would try to make some sugar cookies using a cake mix. In all reality, this only saves about 2 steps in the baking process, but that was enough for me to try it out.

When I was first mixing up the dough, I noticed that it seemed to taste different from normal sugar cookies (as most cake mix cookies do) but once I added the vanilla, milk, and flour, it took out the distinct "cake mix cookie" taste that's not at all like the traditional sugar cookie. In the end, they tasted a lot more like regular sugar cookies and even kept their shape better than the freezer dough I used for the first batch!

Also, I think the best thing about them was that they actually stayed soft! Sometimes when making sugar cookies, you end up with something that's a little more like icing on a flavored piece of wood... completely stiff and crunchy. I happen to like soft sugar cookies, which was great, because these turned out perfectly soft yet still very easy to manage while icing them!

These cookies were honestly so good! I can't wait to make them again next year!
