Candy Cane Cookie Truffles

Move over sugar cookies, there's a new king in town! Haha!

Every time I make Christmas treats for our neighbors and friends, these candy cane cookie truffles are the one thing people always comment on! I totally know why too. They're sooo good!

I finally wrote the recipe out for John's work because so many of his work buddies were asking for it, and I thought I might as well post it on here as well.

Not only are these truffles great! but they're also pretty easy.

With only 4 ingredients, not much can go wrong! Unless your 3 year old tries to help dip them... then there may be a few mistakes that need to be eaten turning them into a whole lot of right! Haha!

To make these candy cane truffles, finely crush up 18 ounces of fudge mint cookies (like Thin Mints) in a large bag. (That ends up being around 72 cookies).
Next, combine the crushed cookies with 8 ounces of softened cream cheese. Shape the mixture into balls and place them on a pan in the fridge or freezer.

Once the truffle balls have hardened, melt the white chocolate candy melts in a bowl according to the package directions. Use a toothpick to dip one ball at a time in the chocolate, place it on a cookie sheet, and sprinkle the top with crushed up candy cane.

As a tip for dipping them, you could try placing them on a cooling rack on top of a pan and pour the melted chocolate on top, but I usually just do it with toothpicks. To do this, I poke a toothpick into a truffle ball and dip the ball in the chocolate. When it's completely coated, I wipe a little bit of excess chocolate off the bottom of the truffle with a spoon and then place the truffle on a baking sheet. I then use another toothpick to hold the truffle down while pulling the first toothpick out.

Once that's done, I usually need to smooth over the white chocolate on top or add a tiny bit more to cover up the hole and then sprinkle the top with the crushed candy cane, making them officially, "candy cane cookie truffles."

Now, I just need to get John to drop all the treats off... When I asked if he wanted to help make some of them, his reply was that he thought we had an unspoken understanding that I would make the treats and he would drop them off... With how cold it has been this year, I'm totally fine with that! Especially when it means I get to be the one to sneak some of the leftovers! Haha!
