Aaaand with it being Easter weekend, we took the chance to head up to John's parent's house for a quick visit!
While we were there, we also celebrated all the March and April birthdays in the family, which of course means: cake!
After seeing this recipe for Lemon Blueberry Cake on "The Cake Blog", I quickly volunteered! With the family getting bigger, I don't make the cake or dessert every time, but I was glad to get a chance to try this one out with more people to help eat it in case it wasn't great...
Now to the cake.

Can I first just say how great this cake was?!
Lately, I've been reverting back to using a lot of cake mixes. After the last one I made, I was honestly so confused since it seemed like I was definitely getting worse at cake decorating! Turns out it wasn't completely my fault... (Still not sounding super confident about that... Haha!)
This cake made me feel like a cake decorator again! It came out beautifully! Definitely one of the best cakes I've ever baked.
It wasn't crumbly or dry and the blueberries (I used fresh that I had previously frozen) were disbursed evenly throughout the layers. The only thing I changed was that I used some lemon extract in the cake and icing recipes instead of lemon zest since I didn't have any lemons on hand.
Decorating the cake was also super easy since I just used an icing spatula on its side while turning the cake to do it.
The icing was a little melty when I piped it on the top, but putting it in the fridge first of even adding a little more powdered sugar would've helped. I just didn't take the time.
I did however, take the time to pipe some small lemon slice decorations using melting chocolates. Once again, because I didn't have real lemons... I don't think Aaron minded though since he ate most of them! The cake originally had 3 of the "slices" but one mysteriously disappeared off the cake some time between the kitchen and the car. No one has fessed up to taking it yet so the prime suspect is the little baby boy who can't talk yet. Lol.
The only regret I have is not taking a picture of the cake after it was sliced. It went faster than I thought it would and I didn't have time to snap a picture!
Not sure if that's actually a bad thing or a good thing since it proves how yummy it was! Either way, I will definitely be making this cake again!
