I've tried a lot of different types of cake mix cookies (like my Cake Mix Sugar Cookies and Lemon Coolers - recipe coming soon) and one kind that I decided to try out a little while ago was Red Velvet Crinkle cookies. They're sort of like chocolate crinkle cookies, but with a little more color and a slightly different taste.
Red velvet always makes me think of my sister Angie's wedding since that's the kind of cake they had. That, and Valentine's Day. I think it's kind of hard to think of red velvet and not think of Valentine's Day!
Sooo... This is a tribute to both their anniversary and Valentine's Day, since it's ironically being posted about half way between both of them. Lol.
To make these cookies, start with the basic recipe for cake mix cookies by mixing together 1 box of red velvet cake mix, 2 eggs, and 1/3 cup of vegetable oil. Once the ingredients are fully combined, take some of the dough and roll it into a ball. Next, roll the cookie dough ball in a bowl of powdered sugar. When it is fully coated, place it on a greased cookie sheet. Continue rolling and coating cookie dough balls until you have enough to fill your pan with the cookie dough balls spaced about 2 inches apart. Bake the cookies at 325 degrees Fahrenheit for 8 to 10 minutes. Let the cookies cool on the pan for a few minutes before moving them to a cooling rack... Or your mouth if they're not too hot at this point. Haha. :)
And that's it! Another incredibly simple cookie recipe all thanks to whoever invented the "cake mix"! And a great treat to make to celebrate the half day between your sister's anniversary and Valentine's Day! Haha! (Oh c'mon... who doesn't want an excuse to eat cookies?...)
