When my husband and I were first married, I came into the kitchen one day with the biggest sweet tooth! You know... the kind where you open your cupboard and just stare at it not sure where to start or if it's worth the wait to bake something. Well, on this particular day my eyes spotted a lemon cake mix in the back and I pulled it out. I wasn't really sure what I wanted to try with it, but if there's anything I like about baking, it's the endless possibilities! It's like an art project you can eat! How great is that?!
Well, I thought of a few things I could make with it and finally settled on cookies. The first time I made them was great, but I've had time since then to make them even better. My husband's always been a classic chocolate chip kind of guy but ever since I've started making these cookie, they've been his new favorite, hands down! (In fact, I've made them a few times since writing this, but they all got eaten before I had a chance to get a quick picture! Which meant, of course, that I had to make them again... which was actually fine with me. Haha!)

To start off, you just make a basic cake mix cookie dough using 2 eggs, 1/3 cup oil, and a lemon cake mix. You can use the same ingredients to make cookies out of any cake mix. I had no idea until my college roommate, Megan, showed me this trick and I'm glad she did! It's so easy and fast!
Once the cookie dough is made, roll the dough out to be about 1/4 of an inch thick and use a cookie cutter or the top of a cup to cut out shapes. Place them on a greased cookie sheet and bake them at 350 degrees Fahrenheit for 8-10 minutes (as all ovens are different, you may need to check them around 6 minutes).

While the cookies are baking, you can make the glaze. All you need to do is mix powdered sugar with lime juice until you get a good glaze consistency.
After the cookies are done baking and they are mostly cooled, dip the cookies into the glaze. You can drizzle the glaze on top instead if you want, but that can get pretty messy. Also, by dipping them, you make sure there's a nice even coat on top. Once they're glazed, they're done and ready to eat!
These cookies are seriously the best! I make them whenever I think my husband needs a quick pick me up and it really makes his day! The hardest part is trying not to let the kids and myself eat them all before he gets home... yeah. they're that good.
